of varietal white wines extending from the fresh and
very drinkable Chasselet, to the extremly fruty
Gewurtztraminer, not forgetting the special flavour of
Pinot noir and finesse and subtlety of Aligoté,
Muskat and Chardonnay, and finally the Pinot gris with
its colour and ritchness in the mouth. The Gamay and
Pinot noir (Oeil-de-Perdrix) rosé wines are
enjoying increasing popularity. They have plenty of
body and noted for their typical fruitiness. Red wines
range from a light and fresh Gamay, a full-flavoured
and generous Pinot noir an a Cabernet Sauvignon whose
rich colour and tannin make it suitable for laying
down.All of our wines have been awarded the A.O.C. due
to their strict compliance with the rigorous standards,
so valiantly defended by winemakers in the Geneva
region.

he selection and purchase of a wine
should not be done haphazardly. Only by sampling a wine
in the best situation can a fair judgment be made of a
wine's quality, giving consideration to a neutral
setting, the correct temperature, the proper level of
humidity and using a proper glass without detergent
residue. Wine tasting is done through three senses:
sight, smell and taste. When tasting, the after taste
or flavor that stays on the palate is an important
consideration; avoid wines with a bitter after taste. A
young wine which is only lightly fruity shoud have a
chance to "breathe" before being tasted. There has been
a great deal written about the proper ways to taste
wine.

hen storing wine at home, try to keep
it at a constant temperature, at least without abrupt
changing. In homes without a true wine cellar, store
the wine in a cupboard in a well-ventilated room.
Commercial wine cupboards with controlled temperature
and humidity are a very nice way to conserve wine.
