Merlot

Merlot, even though its origin is probably French, can be considered an international grape variety as it is also grown in Italy, Switzerland and many other parts of the world. Present in Geneva for several decades, it has adapted particularly well to our climate. It gives tannic wines but more supple than the Cabernets. Usually quite intensely coloured, it will show beautiful shades of red and purple.
The Merlot is suitable for vinification in vats as well as for maturing in barrels. Our Merlot is matured in oak barrels to bring to its bouquet the complexity of the wood’s aromas but also to tame its tannins.

Tasting:
Nose: fresh with a mix of red and black fruit notes.
Palate: the mouth is structured and the tannins are still very present, especially in a young wine.

Food and wine pairing:
Leg of lamb, grilled pork chops, ribs, hare.
